Böker Saga Chef Knife by Jesper Voxnaes

The Saga knives are a range of kitchen cutlery from Böker. For their design the company worked with long time collaborator and custom knife maker Jesper Voxnaes. The model reviewed here is the Chef knife. There is also a paring, all purpose utility and santoku to complete the collection.

This is the largest in the series having an over-all length of 12.75″ (32.4cm). The blade has a length of 7.75″ (19.7cm) and is .098″ (2.5 mm) at the spine. A full flat grind brings the stock down to receive its fine secondary bevel. All blades in the series are made from 440C and hardened to 57-59 Hrc. 440C is considered a mid-to-high end stainless widely used in cutlery and is found throughout several of Böker’s product lines. Although 440C has been pushed away from the steel aficionado spotlight by the latest greatest super steels, it is still an excellent choice as it is easy to maintain, takes a great edge and is very corrosion resistant. All properties that are desirable in an every-day kitchen knife. The Saga series come in either a classic satin or more modern stone wash finish. Stone wash blades offer more scratch resistance due to their work hardened surface. It also hides scratches well with its varied matte pattern. Böker’s logos, Saga, the steel type and a unique serial number are etched on the blade. Thankfully word-marks don’t detract from the aesthetics as the company has a sensitivity to typography.

The handle on the knife measures 5″ in length and .83″ at its widest and is a full tang construction. There is a good amount of palm-swell and a flared pommel for a secure grip. The inner handle edge is also contoured and transitions to the blade with a curving shoulder. The inclusive ergonomics are very comfortable, offer excellent control and will support long cutting tasks.

The scale material on the knife is satin polished black G10 with thin, deep red coloured liners. G10 is a very tough laminate that is extremely impact, wear and solvent resistant. Another great choice for the kitchen. The scales are glued then and fastened with large tubular pins. This hollow pin and lined G10 construction is found in most other designs by Voxneas.

The Böker Saga is a capable kitchen tool that would be most comprehensive in its full set. The modern materials and finishes used are more commonly found in sport and utility fixed blades and folders but are a very welcome inclusion. Balanced slightly toward the handle, the Saga feels very light and controlled in the hand and is a pleasure to use. Its minimal appearance clearly shows off the confident lines and assembly of this attractive knife; qualities found in most of Jesper Voxnaes designs.

The knife comes in a presentation box bearing the tree logo of knives made in their Solingen factory.
